Cooking Recipes and Gastronomical Information

Gastronomy: USA

Contrary to popular opinion, the gastronomical delights of the USA reach far beyond the fast food wrappers! Although the States offer up a plethora of cheap joints offering everything from burger and fries to tacos and doughnuts, there is hearty American food available if you take the trouble to avoid the neon lights. Fried chicken, roasted meats, corn on the cob, baked beans, meatloaf and the world-famous apple pie are all USA cookbook classics. Meanwhile, health conscious Americans have encouraged the popularity previously reserved for burger bars to spread to soup stores and salad bars. The huge scale of the USA means that American cuisine covers a vast range of taste sensations. Whilst old classics are never off the menu, it’s worth trying the local favourites for a real taste of the USA.

Try these traditional dishes for an introduction to America:

Classic cheeseburger

1 lb minced beef
55g fine breadcrumbs
1 egg
Pinch of salt
Pinch of black pepper
4 slices of cheese
4 burger buns

Beat the eggs, salt and pepper together. In a separate bowl, mix the breadcrumbs into the beef mince. Add the egg mixture and mix together well. Divide the mixture into four, and shape each quarter into a burger patty. Grill or shallow fry the burgers until thoroughly cooked: approx. 6-8 minutes per side, depending on thickness. Take the burgers out the pan and place a slice of cheese on each, immediately. Place burgers in buns and serve with coleslaw, relish and fries.

Pecan Pie

9” ready-made pie crust
1 cup of chopped pecans
½ cup of sugar
¼ cup of melted butter
3 eggs
1 cup clear / white ‘Karo’ syrup
Pinch of salt
1 tbsp flour

Preheat the oven to 350 degrees Fahrenheit. Beat the eggs with the salt, then mix in the flour and sugar. Slowly add the syrup and then beat the mixture well. Add the melted butter and pecan nuts and stir thoroughly. Pour the mixture into the pie crust, and bake the pie for between 45 minutes and 1 hour. The pie is ready when the topping begins to crack. Serve warm.
