Gastronomy: Skiing Holiday

Careering down the powdery slopes of the Swiss / French / Colorado mountain ranges, food might be the last thing on your mind. Just wait until the boots come off, the sun goes down, and you're sitting before the open fire of your ski lodge: the hunger will soon kick in! Traditional fare remains a ski resort favourite, so be sure to check in for a cheese fondue in Switzerland and a glass of mulled wine on the alpine slopes in Germany. However, ski resorts are becoming more and more aware that their clientele expect great food to accompany great skiing, and often the resort restaurants themselves are some of the best places to get a gourmet meal. The Independent recently published a list of great ski resort eateries, offering everything from open-air wok cuisine to a barbeque with blueberry tequila, and all halfway up a mountain. If your budget limits your options, try preparing local cuisine from the comfort of your own chalet with local ingredients you'd never find in supermarkets back home. Just remember however, if you stop at a ski resort halfway up a mountain you'll have to get back home at some stage: and skiing whilst under the influence can be a hazard to your health!

Try these skiier-friendly recipes for cold nights on or off the slopes:


Cheese Fondue

225g Emmental cheese (grated)
225g Gruyère cheese (grated)
1 garlic clove
500ml dry white wine
1 tbsp lemon juice
2 tbsps flour
3 tbsps Kirsch (alcohol)
1/4 tsp white pepper

Rub the garlic clove thoroughly around the inside of the fondue pot (leave clove in pot or throw away, as preferred). Pour white wine and lemon juice into heated pot, until mixture is hot but NOT boiling. Reduce the heat and, stirring continuously, add the cheese slowly. Continue to stir and add remaining ingredients until thoroughly mixed. Tip: if mixture is too liquid, add more cheese. If mixture is too solid, add more wine. Serve with fresh bread and vegetables in bite-sized chunks.

Hot Chocolate with rum

5 tsps hot chocolate powder / cocoa
300ml milk
1 tsp sugar
dark rum (to taste)
25g grated chocolate

Heat the milk slowly in a saucepan, taking care that the milk does not boil. Add the chocolate powder / cocoa, sugar and half the grated chocolate and stir continuously until well mixed. Try one teaspoon for taste: add more sugar / chocolate as required. Take the mixture off the heat. Pour a little of the rum into a mug, and slowly pour in the hot chocolate mixture. Taste another teaspoon, and add more rum as desired. Sprinkle the remaining grated chocolate on top and drink immediately.
