Onion and Apple Chicken Livers This is truly a taste of the countryside, and only fit for those with a more sophisticated palate. Often served at fine dining locations in Warsaw, this is a Polish favorite.
Ingredients: · 4 apples · 600 grams of chicken liver · 2 onions · 100 grams flour · 2 tablespoons marjoram · Oil for frying · Salt to taste
Directions: Chop up the onion into tiny pieces and sauté until translucent. Meanwhile, peel and finely slice the apples and, with a small amount of water cook them until the apple slices are soft and mushy. Clean the chicken livers before submerging them in flour and removing the excess dry flour by shaking. Now you’re ready to fry the chicken livers, do so with high heat and oil, until browning. Season with salt and drizzle the sauce of the livers before serving. And don’t forget a dash of delicious marjoram!
Polish Pancakes (from scratch) This is one of the best-kept secrets of the Polish countryside, and anyone who has spent time in Poland will remember this recipe fondly.
Ingredients: · 4 eggs · 50 grams plain flour · 1 1/2 liters milk · 4 teaspoons confectioner’s sugar · fresh raspberries
Combine the eggs, sugar and sifted flour, boil the milk in a pan and add spoonfuls of the batter at a time, this milky mixture will make a polish pancake to die for. Despite the conventional seeming recipe, this Polish method brings distinctly delicious results. Serves 4.
