You might be forgiven for drawing a blank when it comes to Norwegian cuisine… what gourmet delights could this northern land inspire? However, a country stretching across 149 000 square miles (around three times as large as England) with less than 5 million inhabitants (around a tenth of England’s population) leaves lots of land available for fresh vegetables, clean air and animal pasture. This unspoilt landscape is bursting with fresh fish, fine free-range meat, fresh vegetables and sun-ripened fruits. Add to these ingredients an ever increasing number of internationally award winning chefs, and you’re sure to be presently surprised by the bountiful harvests of the north.
Try these Norwegian dishes at home:
Norwegian fried mackerel
1-2 mackerel fillets (per person) A little flour Salt and pepper A knob of butter Sour cream (as accompaniment)
Dry the mackerel fillets thoroughly and then coat with the flour, salt and pepper. Cut into the skin of the mackerel fillets three diagonal slits. Fry the fillets in the butter until they are golden brown. Remove them from the heat and serve immediately with sour cream.
Fresh Waffles
100g butter 2 eggs 4 tbsps sugar 1 tsp vanilla sugar 14 fl. oz. flour 20 fl. oz. milk
First melt the butter and pour it into a mixing bowl. Add the remaining ingredients and beat the mixture thoroughly until a smooth batter forms. Allow the mixture to stand for 20 minutes. Ladle the waffle batter into a waffle iron, and allow the waffles to cook. Serve immediately with fresh cream and jam. Makes about ten waffles. |
